old yeast

i have some White Labs California Ale yeast from '06. it has always been in the refrigerator, is there anyway to use it now and it still work?

Try it, and find out. If not, the Safale 05 dry yeast is very close to the same thing. Very clean.

Make a starter. If the starter takes off, its good, if it doesn't its bad. I've recovered much older stuff than that, sometimes it takes a while. Start off with a small starter, something like twice the amount of yeast you have. When that takes off, step it up to your usual starter size (at least a liter usually). Its still good, but it may take a while to get the viability back up.

how long should i give it to see if it works in the starter? within 4 days i would think, right?

That should do it, but if it doesn't, give it a little longer. Depending on the volume of your starter compared to the amount of viable cells, times vary.

If it takes more than 24 hours, always chill it when its done, and decant the top liquid. Anything left like that for more than a couple of days becomes oxidized, and you don't want it in your beer if you can help it.

do you have that style in the yeast bank? if so, how much to buy for two 5 gallon batches?

are you looking for WLP001? if so yes it is the yeast bank, how much? that depends on the Yeastmaster.

I also have a White Lab tub of California ale yeast
which is WLP001 from Sep 06. I made a starter
with some out dated yeast last year and it did
take 3 day to start, it did fine.You can give it some more
O2 to help get it started Give it a shot.

Yeastmeister you can have this tude of yeast
for the clubs yeast bank if you like.
