Justin Granger brewed a "Beet Ale" using beets as the vegetable added to a base lager beer. When I tried it, I could taste the beets, and thought of beet salad. When looking at it in the carboy before kegging, it had a pink hue. You can see the pink in the tubing and in the top of the keg in the attached picture.
Yep. Yeastmeister says it won't stay pink for long. I'm not a fan of red beets, myself. So I can't see using them in beer. Golden beets are tasty, though.
