Cry Havoc

Postby redtail28 » Fri Jan 28, 2011 2:09 pm

I'm putting a starter of White Labs Cry Havoc
WLP 862 on the stir plate today. I would like
some input on a style to use it in.
Since it can be used in ether Lager’s or ale’s
I was thinking of a Cream Ale.

As I understand it, Uncle Charlie abused that strain so badly it doesn't know what it is any more. I personally don't like cream ales particularly, but it's your brew. I say brew what you want to drink. Cry Havoc can be used to make anything except a non-sour Belgian. Makes me wonder about using it in a wheat beer though. Hefe, Berliner weisse, Wit . . .

Agreed, Charlie says its suitable for just about everything. I believe I have a book where he claims that years later he has been told by the original source that its Budweisers yeast. But he has used it on almost all ales and lagers he has brewed.
