I spent the better part of six years studying in detail every brew stand that was built in the DYS. And in many other clubs besides. I watched and learned. Not only from the great and brilliant ideas of many members, but also the many, and sometimes costly, mistakes. From these observations, I have distilled my guidelines as you see them at the top of this thread. Take them or leave them. They represent the genius and experience of a great many people. They are mine only because I wrote them down.
Never trust a skinny chef, a sober brewer, or a cat with thumbs!
