Brewed an experimental amber. It was last minute so I kind of threw a bunch of stuff together. Everything was fine till I went to my fridge to get a couple of packs of US05 and I only had one one and a pack of champaign yeast. Oh well. We shall see. I did one keg of each.

FYI - Never mix the 2 at the beginning, champagne yeast is a killer yeast. It will suppress and take over the US-05. Most wine yeast is killer.

as potent as us 05 is, I would have just split it between the two. I doubt if that would have delayed fermentation for more than an hour or two. I have under-pitched in the past and found that with this yeast, it doesn't make any noticeable difference in the finished beer.
