Does anyone know of a yeast with a nice citrus finish and good attenuation? I wanted French saissons but didn't get a culture before it was pulled :x
I e-mailed the Yeastmeister to see if he had any ideas about how I might track some down, but . . . Anyway now I'm looking for a good substitution. I'd like to stay away from Banana, pineapple and mango type flavors. I just want a nice citrus. Any ideas?

Fruity yeast is easy to spot, just look for the rainbow flag.

Not that there's anything wrong with that.

here is my list for Belgian yeast, I do not know of any yeast that will give a citrus flavor that would come from the hops try dry hopping Cascade hops.

The french saissons is supposed to have a citrus finish which is why I want it so bad. I can't get it fromWyeast anymore, but I was hoping the Yeastmeister might know how I could track down a culture. I tried the online list for the Foam Rangers website, but they seem to have fewer strains the The 'meister.

Looking....I emailed a few people, but haven't heard back yet. I don't have many wyeast cultures, I've been collecting whitelabs for a while because I liked the fact that I could seal them back up. That was before I started culturing my own however....

How about using a clean neutral yeast and adding some lemongrass to the primary or secondary. Just a thought.

I've been leaning in that direction, though I think lemon verbena would give a truer lemon flavor. I'm trying to come up with some other citrus flavors as well. getting a good blend of citrus looks like it may take awhile to finalize. I'm also a little concerned about strange colors. The beer may end up with a decidedly green tinge.

How 'bout trying a little bit of orange or lemon zest ? As long as you dont overdo it, it should give a nice citrus flavor.
