Elderberry season

Passing by a field of elderberries I noticed several heads of ripe berries hanging down. For those who might be interested in doing something with elderberries, now is the time to go picking.
You can always freeze them until you get enough for whatever project you have in mind. (Use only ripe berries, the under-ripe berries are toxic. You will also get a ring of green goo around your fermenter. DO NOT use hot water to clean it. Use only cold water and oxyclean. A carboy brush is OK if you do it in glass or stainless.)

Man! Those ripe elderberries are SOOOO tempting! They seem to be ripening much more evenly this year. I saw many clusters without a single under-ripe berry!
