Wort stability test

Whenever I did my last brew I saved a small amount of wort and put it in a sanitized container with a lid. It is sitting on top of my fridge at room temp. What information can I gather by doing this? I basically did this just because I wanted to see if it really would start to do something on its own.

I do a wort stability test on most of my brews, as most members in the club will affirm I am kind of anal when it comes to preventing a infection as I had a run of them when I first started. Nothing worse than making a lager and after 2 months finding out it was bad due to a infection. I would suggest using a sterile container for all tests.
