How do you choose hops to brew with?
Hop wheel or chart? Trying to choose what
hops to put in a Blonde ale?

I always choose the hops to brew with by the flavor profile I am trying to achieve. This is somewhat problematic because there is a very good, but limited selection at Marcello's and I haven't yet ordered hops online.
If you are brewing a Belgian style blond, you're going to want to use some very mild, low-alpha hops. Saaz is a good bet unless you can get some Mittelfruh.

you need to find a good base recipe for whatever you are brewing and the modify it from there. I would highly recommend buying Jamil Zainasheff's book " Brewing classic styles" and if you want to design your own beers buy "designing great beers" can not go wrong with these books.

Those are both great books. However, for designing Belgian recipes, you need one of the style books from (they're cheaper from Amazon) I recommend "brew like a monk" for golden ales and the trappist styles.
