I have not brewed in a while because of my job but I would do is adjust all my water at 1 time and keeping my sparge water at approx. Ph 5.6, this would help reduce the tannen extraction and help to increase the final run off so the gravity does not drop as fast. I need to listen to the water show again on the brewing network as they talk about this before I brew again
